  • Red Lentils

    1/4 cup

  • English peas

    1/8 cup

  • Olive Oil

    1/2 tbsp

  • Onion

    1/8 cup

  • Water

    2 1/2 cup

  • Kale

    1/8 cup

  • Mixed vegetables

    1/8 cup Sweet potato
    1/8 cup Beet
    1/8 cup Red cabbage

  • Ground spices

    Pinch of Garlic powder
    Pinch of Turmeric powder

Get it ready

1. Carrot, Russet potato, Sweet potato: Peel the skin and chop them into small pieces.

2. Red cabbage & Kale: chop them into small pieces.

4. Onion: Slice half inch from stem end and root end. Cut onion in half, and peel back the onion skin. Slice and chop it into small pieces.

Let's get cooking

STEP 1

Bring 2 cups of water and red lentils to boil in a small saucepan. Reduce heat to medium and simmer until cooked. Drain well and set it aside.

STEP 2

Heat olive oil in a small saucepan over medium heat. Add the onion and sauté until softened and translucent. Add turmeric and stir for 5-10 seconds.

STEP 3

Add beets, sweet potato, peas, and red cabbage and sauté until fragnant. Add in water and bring to a simmer and cook, uncovered, stirring ocassionally.

STEP 4

Once everything is soften, add red lentils. Stir gently to combine.

STEP 5

Season with garlic powder.

STEP 6

Allow it to cool for 3-5 minutes before serving/storing.
