  • Russet potato

    1/4 cup

  • Shiitake mushroom

    1/8 cup

  • Olive Oil

    1/2 tbsp

  • Onion

    1/8 cup

  • Kale

    1/8 cup

  • Water

    2 1/2 cup

  • Mixed vegetables

    1/8 cup Green beans
    1/8 cup Carrot

  • Ground spices

    Pinch of Garlic powder
    Pinch of Onion powder
    Pinch of Turmeric powder
    Pinch of White pepper powder

Get it ready

1. Russet potato & Carrot: Peel the skin and chop it into small pieces.

2. Shiitake mushrooms: Cut into small pieces

3. Onion: Slice half inch from stem end and root end. Cut onion in half, and peel back the onion skin. Slice and chop it into small pieces.

4. Green beans: Line up all the ends of green beans against your knife edge. Cut off both ends and chop them in half.

Let's get cooking

STEP 1

Bring 2 cups of water and potato to boil in a small saucepan. Reduce heat to medium and simmer until it is soften. Drain well.

STEP 2

Return potatoes to saucepan. Mash potato with potato masher. Set it aside.

STEP 3

Heat olive oil in a small saucepan over medium heat. Add the onion and sauté until softened and translucent. Add turmeric and stir for 5-10 seconds.

STEP 4

Add carrot, green beans, and shiitake mushrooms and sauté until fragnant. Add in water and kale. Stir ocassionally until everything is soften (or until water is fully absorbed).

STEP 5

Add mashed potato and mix well.

STEP 6

Season with ground spices (garlic, onion, and white pepper powder)

STEP 7

Allow it to cool for 3-5 minutes before serving/storing.
